Vegetables, such as onions and tomatoes, are layered with rice and meat or added to the gravy. Depending on the cook's preference, they may or may not be cooked with the rice.


Different Kinds of Biryani

1. Hyderabadi Biryani


Hyderabadi is the most popular type of Biryani. It is the traditional dish of Hyderabad city. The Hyderabadi Biryani is prepared with a combination of spices and different kinds of meat, then layered with rice and cooked in dum.


2. Kacchi Biryani

Kacchi biryani is prepared without herbs and spices and with less oil. It involves adding spices to rice and cooking it separately in a Kacchi.


3. Sindhi Biryani

Sindh is an integral part of Pakistan, and the local people have their biryani cooking style. The rice is layered with mutton and chicken, then covered and cooked, similar to the Hyderabadi Biryani.


4. Malabar Biryani

Malabar is an Indian biryani, so it is characterised by using a lot of spices. The rice is prepared with a combination of herbs, including saffron. The meat is layered separately, cooked and served with rice. 


5. Lucknowi Biryani

Lucknow is known for its wide biryani varieties with different layers. It is prepared with many spices, such as saffron and cinnamon, and several dry fruits.


6. Afghani Biryani

Afghani is a type of Biryani prepared with a combination of mutton, beef, chicken, and a particular kind of dumplings.


7. Bombay Biryani

Bombay biryani is a mixture of different types of rice from other countries, with a combination of spices. It is served with vegetables, meat, and dumplings.
