1. Kheer 


Kheer is a traditional sweet pudding made with rice, milk, and sugar. Depending on where you are, the rice may be replaced with other ingredients such as sooji, phool makhana, sabudana, grated carrots, and lauki. Additionally, a special version of kheer made with vermicelli noodles called seviyan is a popular dish for the Muslim festival Eid. Parsis in India also make a unique version of kheer called doodh pak, which has a hint of nutmeg.


2. Laddu


Laddu is a famous Indian sweet that is enjoyed by many. It is a round ball of sweet delight created with a combination of flour, fat, and sugar. Depending on the season or occasion, different ingredients may be added to make the treat even more special. Laddu is the ultimate symbol of joy and is the perfect way to celebrate a happy event - when something good happens, it is common to say "laddu baato" or "let's break out the laddus"!


3. Phirni


Phirni is a creamy, thick and sweet dessert served cold, usually as the final dish in a Mughlai or biryani feast. It is prepared with fragrant basmati rice that has been ground into a coarse texture and cooked in milk, then flavoured with cardamom, rose water and saffron. This Indian dessert is also served in small earthenware vessels known as sakoras or mitti ki kasoors and is usually topped with slivers of almonds, pistachios, and silver leaf.


4. Bebinca


Bebinca was created centuries ago when the Portuguese were in charge of Goa. It is said that a nun from the Santa Monica convent used the egg whites to bleach her habits, and with the yolks left, she prepared this sweet delicacy. Bebinca requires time and dedication to be made, with a minimum of seven layers baked one after the other. Due to the effort put into producing it, it is known as the "Queen of Goa" desserts.


5. Kulfi


Kulfi is a creamy, rich Indian ice cream made by boiling milk over low heat until it becomes thick and creamy. Once cooled, the reduced milk is usually combined with cardamom, saffron, almonds, pistachios, and sugar for flavour. The mixture is then put in kulfi moulds, placed in an earthen pot filled with ice and salt, and then quickly frozen. This traditional dessert is an absolute delight when served either dipped in sweetened milk or cut into discs.


6. Jalebi


If you're walking down a street in India and catch a sweet and tantalising aroma, it's likely jalebi. This popular dessert is prepared by fermenting wheat flour (known as maida), mixing it with a yoghurt concoction, and then frying it in oil. It is often served with raabdi, which makes it even more delicious. There are also other types of jalebi, such as chenna jalebi, made with cottage cheese and mawa jalebi, a spiral-shaped version popular in central India.
